TOMATO-BASIL SOUP WITH GARLIC GRILLED CHEESE SANDWICH




IT'S FINALLY FEELING LIKE AUTUMN HERE IN SOUTHERN CALIFORNIA AND MAN AM I HAPPY! 

HEY Y'ALL....AUTUMN IS MY FAVORITE SEASON BECAUSE EVERYTHING IS BEAUTIFUl, FROM APPLE PICKING, TO THE TREES CHANGING COLORS(EVEN THOUGH WE DON'T SEE MUCH HERE IN SOUTHERN CALI), SWEATERS/BOOTS, THANKSGIVING, BAKING AND OH YA MY BIRTHDAY!

THESE FEW DAYS IT'S BEEN COOLER AND IT'S BEEN SO NICE! WHO AGREES.....(RAISES BOTH HANDS) SO WITH THIS COOLER WEATHER I GET EXTRA HOMEBODY AND JUST COOK AND BAKE MORE AND CUDDLING WATCHING NETFLIX(STRANGERS THINGS AND DISNEY MOVIES).....AHHH AUTUMN

LET'S GO BACK.... YES I SAID CUDDLING BUT SINCE I'M CURRENTLY SINGLE; THE ONLY CUDDLING I'LL BE DOING IS WITH MY BLANKETS/PILLOWS OH AND SOMETIMES YODA BUT SOMETIMES HE WANTS TO BE INDEPENDENT(CRYING EMOJI)
FOR A WHILE I'VE BEEN WANTING TO DO TOMATO-BASIL SOUP AND OF COURSE YOU HAVE TO PAIR IT WITH GRILLED CHEESE BUT HEY I ADDED MY TWIST IT WOULDN'T BE ME IF I DIDN'T. I HOPE Y'ALL ENJOY AND HAVE A COZY AUTUMN.
DON'T FORGET TO DIP THE GRILL CHEESE IN THE SOUP. IT'S LIKE THAT PART IN RATATOUILLE WHERE THAT FOOD WRITER FLASHES BACK TO HIS CHILDHOOD WHERE HIS MOM MADE HIM FOOD....YUP LIKE THAT..ALTHOUGH I JUST FLASHED BACK TO THAT PART NOT THAT I DON'T HAVE GREAT MEMORIES BUT I LOVE THAT PART AND MOVIE. WELL ENJOY :)



TOMATO-BASIL SOUP
+ 8 ROMA TOMATOES OR 42OZ CANNED WHOLE PEELED TOMATOES
+ 2 MEDIUM CARROTS
+ 2 MEDIUM GARLIC CLOVES (MINCED)
+ 1 WHITE ONION
+ 1/4 CUP FRESH BASIL (2 HANDFULS OF BASIL)
+ 1 TBSP LEMON JUICE
+ 3 TBSP BUTTER
+ 4 CUPS OF CHICKEN STOCK 
+ 1 CUP WATER
+ 2 TBSP OF PAPRIKA
+ 2-3 TBSP SALT (TO YOUR TASTE)
+ 1 TBSP BALCK PEPPER

1.IN A LARGE POT, MELT BUTTER ON MEDIUM HEAT. STIR IN GARLIC, CARROTS AND ONIONS. COOK TILL ONIONS ARE SOFT.
2.ADD CHICKEN STOCK AND WATER COVER AND SIMMER FOR 20 MINS.
3.ADD TOMATOES AND STIR AND LET SIMMER FOR 10 MINS.
4.REMOVE FROM HEAT AND BLEND AWAY.
5.ADD  BASIL, SEASONINGS AND LEMON JUICE
6.SERVE

*IT'S IMPORTANT TO USE FRESH BASIL.
I USED ONE FRESH TOMATO AND THE REST FROM THE CAN
 IT WAS STILL SOOO GOOD. 

GARLIC GRILLED CHEESE SANDWICH
+ SOURDOUGH BREAD
+ 4 TBSP OF BUTTER
+ 4-6 GARLIC CLOVES (MINCED FINELY)
+ CHEESE OF CHOICE (I USED MILD CHEDDER & SWISS)

* YOU CAN DO HOW I DID IT BUT IT HAVE TO WATCH CARELY THE GRILL CHEESE BECAUSE THEN THE BREAD WILL BURN. I DID IT TWO WAYS. 
FIRST MIXED THE GARLIC WITH THE BUTTER AND SPREAD IT ON THE OUTSIDE. OR MY SECOND TIME AROUND I PUT THE GARLIC INSIDE AND ONLY THE BUTTER ON THE OUTSIDE STILL BOTH VERY GOOD.BELOW I WILL GIVE INSTRUCTIONS ON MY SECOND TIME AROUND BUT IT'S ALL UP TO YOU. PHOTOS ON HERE ARE THE FIRST TIME AROUND.

1.WARM UP FLAT SKILLET TO MEDIUM HEAT.
2.SPREAD THE BUTTER ON THE OUTSIDE OF THE BREAD ON BOTH SIDES.
3.ADD GARLIC AND CHEESE OF CHOICE. (I ADDED LOTS BECAUSE I LOVE CHEESE AND GARLIC!)
4.GRILL ONE SIDE MAKE SURE BUTTER SIDE IS ON SKILLET THEN COVER IT SO CHEESE MELTS FASTER AND THEN REMOVE COVER AND FLIP TO OTHER SIDE BUT THIS TIME DONT COVER
5.BAM LOOK AT THAT HEAVENLY GOODNESS
6.DIP SANDWICH IN SOUP & EAT.
